Parmesan Chicken and Green Beans

I found this recipe back when James and I were still dating and I would make him dinner at his apartment. Before he came around, I never really had to ever cook for myself. My mom always made dinner and when we had to fend for ourselves it was usually Top Ramen or leftovers heated up in the microwave.
I was very nervous to cook for James because I had no idea what I was doing. I was afraid I wouldn’t cook the chicken enough and give us both salmonella poisoning or put too much garlic in it. Ha! there is no such thing as too much garlic, what am I saying?
He once called a pizza I made”an abomination” because I put the cheese on before the sauce on accident, so…no pressure…

Luckily, when I made this recipe for the first time the chicken was not undercooked and it had just the right amount of garlic. This is now James’s favorite thing that I make. I must say I’m quite fond of it myself.

Here’s what you need:

Parmesan Green Beans. She Loves Happy Lifestyle Blog_edited-11) We eat roughly 3-4 pieces of chicken each so depending on how many people you are feeding, you can add or subtract from that number

2) Preheat oven to 375

3) While the chicken is defrosting get your preparation station ready. If you discover a way that works for you, go for it! This is what I have discovered is the most efficient way for me:

4) All you have to do is eyeball the parmesan mixture. Cover the plate with the powdered parmesan, sprinkle some parsley and garlic salt to your liking, mix it up, and presto!

5) Place a greased cookie sheet next to the parmesan plate for easy transferring and lets get to slathering those puppies in mayo!

IMG_28486) Mmm, delish….cover one side in mayo and then place the coated side in the parmesan mixture and then coat the other side.

7) Firmly press the parmesan on all sides of the chicken and make sure its covering the whole thing.

IMG_28498) Place the chicken on the cookie sheet and repeat this process with all the tenderloins.

9) Once finished, slide the cookie sheet into the oven and bake for 30 min

While the chicken is baking, let’s get started on the green beans!

1) Place a handful or two of green beans in a large bowl

2) Sprinkle pepper and garlic salt all over

3) Coat with a good layer of Olive Oil and mix all together

4) Pour green beans onto a small cookie sheet.

5) Sprinkle the shredded parmesan all over the green beans

6) When the chicken timer is at 15 minutes, slide the green beans in with it so they get done at the same time. If both cookie sheets don’t fit, as soon as the chicken is done, put the green beans in for 12-15 min. Then serve!

    Yum! I made parmesan chicken for dinner last Friday night. I typically use olive oil but I’m going to have to try mayo. Your chicken looks so golden and crispy!
